A Holiday Weekend Eat-A-Thon

BEWARE! This weekend, with the Easter holiday, can be hazardous to your diet! Watch out! The American way of celebrating any holiday can really reek havoc with our digestive track and overall health. Typically, we eat until ready to burst and then repeat this behavior every 2 to 3 hours throughout the day. Start your Easter morning (beat the Easter Bunny) with a welcoming spring walk outdoors!  Make it a walk/run for 30 minutes of metabolic boosting joy. Instead of taking full portions of the delicious favorites, cut your portions in half. DRINK WATER!

Tofu with Roasted Veggies

14 oz firm tofu, drained1/4 cup balsamic vinegar3 cloves garlic, minced1 Tbs. reduced-sodium soy sauce3 Tbs. extra-virgin olive oil, divided1/2 lb. mushrooms1 bunch scallion, chopped1 cup bulgur1 1/4 cups boiling water2 bell peppers, uartered10 sprigs flat-leaf parsley, minced1 Tbs. fresh lemon juice1/4 tsp. kosher salt Cut the tofu block across its width into 6 slices, then cut each slice in half to make 12 rectangles.  Blot with paper towels.

Ok so I'll admit I started working out with Jane Fonda, I felt the burn, wore the leg warmers, head bands the whole bit. The fitness industry has come a long way since then. Things have come and gone and returned- renamed, repackaged, recycled. We have evolved and educated, certified and re certified,expanded and grown and through it all we remained functional. I mean after all isn't functional a matter of doing it? Doesn't functional mean it means something? I mean would you have a client do a head stand for an hour?

If it has Vitamins, it must be good for me.It started 40 years ago with breakfast cereals ("fortified with 8 vitamins and iron"), Wonder Bread ("helps build strong bodies 12 ways!"), and sugary kids drink like Hi-C, and Sunny D ("100% vitamin C").Now vitamins are also being added to cereal bars, evergy and granola bars, and sugary drinks for adults. And we keep falling for it.

It's easy to make mistakes when it comes to buying food. (even teh most seasoned nutrition mavens, who should know better, occasionally screw up.)Maybe you didn't notice that the reducted-fat peanut butter has as many calories as (and more sugar than( the regular. Or that you typically fill your bowl with not one, but TWO 200-calorie servings of cereal. Or that you would never touch Wonder bread but can't resist a crusty (white flour) baguette.
