Quick and Sweet Cupcakes
A quick healthy option for making cupcakes for when your short on time and want a little healthier treat. I make various varieties depending on the event and who they're for-->Cupcakes are portion controlled and are a great fix for a sweet tooth...just don't eat too many :)
Quick and Sweet Yogurt Cupcakes
ingredients:
1 cake box mix --your choice!
1 16oz cup of non-fat vanilla greek yogurt
1 cup water
Mix all ingredients together and follow directions on cake box mix.
Pumpkin Cupcakes
ingredients:
1 Spice Cake Mix Box
1 can Pureed Pumpkin
1 Cup water
Mix all ingredients together and follow directions on cake mix box.
Caramel Apple Cinnamon Cupcakes
ingredients:
1 vanilla cake mix box
1 cup unsweetened applesauce
1 16oz cup Chobani Apple and Cinnamon non-fat greek Yogurt
1 cup water
1 tbsp cinnamon
1/2 cup sugar free caramel sauce
Mix all ingredients together and follow directions on the cake mix box.
** For icing I make a glaze using the sugar free caramel sauce and apple cinnamon baby food (I know sounds weird... but it works). Mix together and lightly coat on top of cooled cupcake.
Sweet and Nutritious Cupcakes
ingredients:
1 cake mix box--your choice ** vanilla or chocolate is best
1 can pureed pumpkin
1 cup water
Mix all ingredients together and follow directions on cake mix box.
For icing I love to use Peanut Butter...There is also Dark Chocolate Peanut Butter and other great new flavors out there!
