Roasted Pumpkin Seeds
Carving pumpkins is a great tradition this time of year. Next time you carve a pumpkin put those nutrient dense insides to good use! The pumpkin can be used in recipes just like you use pumpkin from a can and the seeds can be roasted to make a quick healthy snack:
Roasted Pumpkin Seeds
Ingredrients:
raw pumpkin seeds
sea salt
Pam Olive Oil Spray
Directions:
1. Scoop out inside of pumpkin
2. Separate pumpkin from seeds.
3. **Save pumpkin for another recipe in a container in the fridge.**
4. Preheat Oven to 400*
5. Boil Water and place pumpkin seeds in boiling water for about 10 minutes.
6. Pour Seeds in a strainer.
7. Spray Baking sheet with Olive Oil Spray.
8. Layer the pumpkin seeds on sheet.
9. Sprinkle on sea salt.
10.Bake in oven for 20-30 minutes. Until brown around the edges. (stirring every 10 minutes).
11.Store in an airtight container.
Pumpkin seeds are a good source of protein, magnesium, & zinc!
