Ingredients:
Quinoa
1/2 bag of frozen mixed vegetables (asian stir fry mix)
1 can low-sodium diced tomatoes
Directions:
1. cook quinoa according to directions on package.
2. sautee veggies and diced tomatoes in a pan on stove--add desired seasonings (I prefer garlic, onion salt, oregano, basil)
3. Once quinoa is cooked add to veggies and mix together well.
