This dish is vegetarian but still filled with protein.
1/2 box whole wheat pasta
1 can diced tomatoes (garlic, onion, basil)
1 cup portobella mushrooms
1 cup baby spinach
2 cups edamame (Frozen unshelled)
1 cup salsa
1/4 onion, diced
1 tbsp garlic powder
1. cook pasta according to directions on package.
2. In a sauce pan sautee mushrooms, onion and spinach with desired seasonings. Once cooked add in can of diced tomatoes, salsa and edamame.
3. Add pasta to the veggie mix and stir and serve!
