Somehow I neglected to blog about week two of my Daniel Fast/Vegan diet. Oops :) So, let me tell you about the completion of week three! I am LOVING my food....I'm still not wanting any meat - not craving it at all!!! Again, with the omission of meat, I just have to be aware of my protein intake. I discovered that I prefer almond milk over soy milk. Almond milk is lower in calories; however, it is also lower in grams of protein so I lost some protein with that choice. My breakfast choices alternate between oatmeal with fresh apples/walnuts/cinnamon and smoothies with fruit, chia seeds, and coconut oil. (If I use frozen mango, pineapple, and strawberries in my smoothie, the coconut oil makes it taste like a delicious beach drink!) Salads, soups, brown rice, beans, veggie burgers, and vegetables always make for a fun, yummy, diverse lunch and supper. I'm snacking on fruit, seeds/nuts, apples with almond butter, hummus/veggies, and brown rice chips :) I've noticed that the only times I'm craving something sweet is when I've not had enough sleep (the three hour time difference between my boyfriend and I sometimes affects this....but it's worth it! lol) or if I'm sitting and watching a movie with my grandmother (I think that is just habit and can be broken....I just drink more water). I'm entering week number four and continuing this journey of food choices!!! Feeling better, more energetic, and healthy..... A great resource is the Daniel Plan (www.danielplan.com).
