My objective when making healthy recipes is to keep it quick, easy and tasty. Today since I was running around doing errands I was very tempted to stop and get some fast food however I remembered that I had some frozen salmon in the fridge! Salmon, as you may know is full of omega 3s, vitamin D and is beneficial for your hair and skin. Once it had defrosted, I seasoned it with sea salt, pepper, rosemary, thyme and oregano then slipped it into the oven for 20 minutes at 350 degrees. I firmly believe that the spices can make or break the salmon. When I first started to make this, I would use regular table salt and pepper-bad mistake. I now use Roland's Sea Salt Coarse Crystals and Caputo's Whole Black Pepper ( crushed through a pepper mill). The other spices are by Caputo as well.
As you can see, it's a pretty tiny piece of salmon so I added a salad of mixed greens with fresh tomatoes and cucumber that I bought from a farmer's market yesterday. It's amazing how much better fruit and vegetables can be when you buy them at a farmer's market. They taste so fresh and flavorful! And they are almost always cheaper than what you can get at the grocery store. I also bought 2 juicy plums and 2 ears of corn. My total came to about $3.50!! I drizzled olive oil on the salad and you can see I also added a side of raw broccoli. What healthy lunch did you eat today?
