In a medium sized mixing bowl, whip the banana until no lumps remain, add 2 eggs and beat into the mixture, add 1 heaping tablespoon of almond butter and mix until color is almond-y and the batter is somewhat thick and creamy (add almond butter as necessary)
Heat a skillet and coat pan with either pam spray or grass-fed butter. Cook them on medium (miss on the low side) heat until they begin to bubble, then flip. Eat
Optional and highly recommended: Put blueberries in the batter as soon as you put them on the skillet. Use grass fed butter as a topping or to moisten the pancakes.
Optional: Use vanilla extract in the batter to lessen the banana taste and add sweetness
